1 1/4 cups salsa
2/3 cup tomato puree
2/3 cup water
1/2 tsp cumin
1/2 tsp oregano
1/2 lb burger
12 corn tortillas
2 cups cheddar cheese, grated
red onion (chopped finely)
You can add:
-taco spices to the meat
-jack cheese, grated
-olive oil
In a medium saucepan mix salsa, water, tomato puree, oregano, and cumin. Bring to a boil. Reduce heat and let it simmer for 15 min. Stir often.
Brown meat. Add onions. Add spices (Ex: Lawry's taco spice)
Fry tortillas in a small pan with olive oil. Heat oil and fry each side for about 2-3 seconds. Careful...oil splatters!
Brush eash fried sofened tortilla with the sauce and then fill with a spoonful of meat and cheese. repeat for 12 enchiladas in a casserole. Cover with foil and bake 15 min at 350 F.
